You know those nights where you just don’t feel like spending hours slaving over the stove but you want a healthy, hearty meal? I started stacking on Suddenly Salad when I’m at the grocery store because they are so easy to make and everybody loves them!
I cooked the Suddenly Salad Harvest Grains. It’s Brown, Wild & Red Rice, Quinoa, with Cranberries & Almonds, and a Sweet Blush. The majority of the cooking time is letting the rice and grains cook, so it doesn’t require lots of attention. I’m able to work on other things while it cooks itself!
Once it’s cooked approximately 15 minutes, the rice and grains will fill up the bag. While your rice and grains are cooking, take the dressing packet and mix it together with 1 tablespoon cold water and 1 tablespoon oil (you can use olive or vegetable). Now drain your rice and grain packet in the sink and rinse with cold water (while it’s still in the bag). Let the rice drain completely before opening. Mix together the dressing mixture and grains and rice. Feel free to add more oil for a different consistency. Once it’s mixed well, add your bag of nut and fruit. I poured most of my bag into the mixture but kept about a teaspoon size out so I can top my main dish with it. It’s all about presentation, right?
Introducing…… Suddenly Grain Salads! The great thing about this meal is that everybody loves it. You can modify it by adding more fruit or any type of protein. A grilled piece of chicken served on top of the salad would make the perfect healthy lunch.
