It’s almost time for the biggest game of the year, the SUPER BOWL. As much as I don’t care to watch the actual game, I love to watch the commercials, to decorate and to cook all the fabulous football themed recipes that I can find. I am slightly obsessed with Pinterest, so I will search for HOURS on end looking for the best recipes and decorations to make. This year, one of my goals is to use my own creativity. As much as I love to make the already thought of crafts on Pinterest, I want to make my own crafts, my own recipes, my own everything.
I was recently sent a fun package from Wholly Guacamole which made me so excited. I’m going to honest here, I’m OBSESSED with mexican food. I could eat it for every meal for the rest of my life and I would never complain, not even once. This year on my birthday, I made my fiance have mexican food THREE times (breakfast, lunch and dinner) because I knew that was the only day of the year that I could get away with it. If only every day was my birthday! Anyways, back to the delicious guacamole package I received. At first I was overwhelmed, I thought “what am I going to do with ALL this guacamole?” Obviously, I couldn’t wait to eat it, but I was worried I wouldn’t be able to eat it in a timely manner. That’s when I decided to incorporate it in my cooking, why limit eating guacamole with only chips?
My most recent recipe that I came up with is Homemade Mexican Bagel Bites. These bite size bagels are full of flavor and perfect to grab and go. Do you know what’s great about this recipe? It takes about 5 minutes and you probably already have all the ingredients in your pantry.
For this recipe I used Bagels (thin cut), Cream Cheese, Rotel Tomatoes, Wholly Guacamole and Bacon Bits. I toasted my thin cut bagels and cut them into quarters, so one whole bagel gave me 8 small pieces (think bite size). First spread a thing layer of cream cheese on the bagels. Next add a hefty amount of Wholly Guacamole. I used the spicy guacamole to give it an extra kick. Next, I opened my can of rotel tomatoes and put about half a teaspoon of tomatoes on each bagel bite. I topped each bite with bacon bits, because let’s be real – bacon makes everything taste better. Not only did these take NO time to make, they tasted delicious. They were simple and will make a perfect Super Bowl treat to eat during the game.
While making my Homemade Mexican Bites, I had an idea to make a simple football banner to help decorate my house for the Super Bowl.
As much as I wanted this to be a quick project, it took me a little longer than expected. I hand cut all pieces to this banner and sewed it to jute twine. The final banner ended up being just under 7 ft long. It would hang nicely on a fireplace but since my fireplace is decorated for Valentine’s Day, I decided to hang it in the kitchen about my stove.

Homemade Mexican Bagel Bites Recipe
- 4 Thin cut Bagels
- 3 oz Cream Cheese
- 1 Can of Rotel Tomatoes
- 1 package Wholly Guacamole
- 4 Tablespoons Bacon Bits
- Toast each bagel.
- Once done toasting, cut each bagel into quarters.
- Spread a small amount of cream cheese on each quarter of bagel.
- Top cream cheese with large spoon full of guacamole. Use Spicy Wholly Guacamole for an extra kick.
- Drain Rotel Tomatoes. Take one spoonful and top guacamole.
- Sprinkle Bacon Bits on top of bagel bites.
