Salads are one of my favorite meals. They are so delicious and versatile. I sometimes have issues when I make them because I’ll add everything under the sun into my salad making it unhealthy which makes me rethink why I’m even eating a salad. I lost sight of why I was eating salads in the first place, so I’ve had to take a step back and really evaluate what I was putting in my salads as well as how much dressing I was using.
I came across a recipe for Dandelion Blue Cheese Salad with Walnuts featuring Castello cheese that looked to die for. I loved that it was a basic salad with a few added ingredients and homemade dressing. It’s amazing how bad some dressings are for you so anytime I can make my own, I will!
I tweaked the recipe just a little bit to my taste buds but it came out delicious. Are you ready to give it a try?
First, grab a head of butter lettuce and give it a rinse. I took a ridiculous number of photos of the lettuce because it was so beautiful! Once you give it a rinse, chop it up into bite size pieces and set it aside.
Now get out a clean bowl to mix your homemade dressing. You will need 1 Tablespoon dijon mustand, 3 Tablespoons wine vinegar, and 1/4 cup olive oil. Mix all three together and you’re done with your dressing. Isn’t that the easiest dressing recipe ever? It’s packed with flavor and costs close to nothing!
Put the chopped salad onto a salad plate so we can add the toppings. First, I added a handful of walnuts then topped with the salad with my favorite Castello Blue Cheese. The blue cheese is the perfect addition to the salad because of the strong flavor it brings. When I add the blue cheese, I don’t have to add any other additions to the salad which I love! Last but not least, top the salad with the homemade dressing and enjoy!
It’s such a simple recipe but love that it is not only filling but healthy!
